PINK VELVET CUPCAKES


After making my cupcakes yesterday, I wanted to make some purely for decoration purposes. I am very pleased with my cupcakes today! Though now.. We have somewhat like 2 1/2 dozen cupcakes in our home... I need my sisters to come over!


Anyways, these are a simple pink velvet with brown sugar cream cheese frosting adapted from a recipe from cakespy.com




PINK VELVET CUPCAKES

1. Preheat oven to 350 and line your pan.

2. Sift together:

2 cups all purpose flour

3 tsp baking powder

1/4 tsp salt.

Set aside.

3. Beat one egg in for one minute. Then beat another egg in for one minute.

4. Beat in 1 tsp vanilla extract

5. Add 1/3 of the flour mixture and beat in on low speed.

6. Add 1/2 cup of milk, and about 1/2 tbsp food coloring, beat.

7. Add another 1/3 of the flour mixtures, beat in.

8. Add another 1/2 cup of milk and 1/2 tbsp of food coloring, beat.

9. Add the rest of the flour mixture.

10. Bake for 15-18 minutes.









Brown sugar cream cheese frosting

1. Cream 1 1/2 cups of room temperature butter with 8 oz room temperature cream cheese.

2. Beat in 1/4 cup brown sugar and 1 tsp vanilla

3. Add 1 tbsp milk and 3 cups of sifted powdered sugar.
